Spaghetti
brand: (recommendation: La Molisana)
- boil water
- add spaghetti and salt into boiling water
- pour some oil
- cook it for 8 mins (estimated time on package minus 1~2 mins, about 8~10 mins before fully cooked)
- take spaghetti out, and pour some oil (to prevent it form sticking to each other)
- get some water out of pot with a bowl for later use)
Classic Tomato Spaghetti
Preparation
- salt
- olive oil
- spaghetti
- basil
- garlics
- onions
- beef minces (optional)
- tomato sauce
Process
Cook noodle first, don’t add too much salt, because cheese and guanciale is satly
- Turn on low heat
- Add onions, stir it until onions turn its colour into transparent
- Add garlic and basil and mushroom (optional)
- Stir
- (optional) Add beef mince and stir it until it is fully cooked
- Add tomato sauce, some water, salt (a bit) and black pepper (more), and leave it until it is boiling
- Add spaghetti
- Add a lot of water
- Put them on the plate
- Add basil
- Add parmesan

Carbonara
Preparation
- 1 egg + Parmesan cheese and beat the egg
- guanciale or pancetta or bacon with lots of fat
Process
Cook noodle first, don’t add too much salt, because cheese and guanciale is satly
- Pour the oil
- Add guanciale to the pan
- Add black pepper until guanciale gets darker
- Turn the heat off
- Add pasta into the pan and add some water (use the water to stop the frying, should be quite after adding water)
- Add egg into pan and stir it
- Put pasta on the plate
- Sprinkle some black pepper
- Add parmesan

奶油培根白醬義麵
- 配料(洋蔥, 蒜, 洋菇, 培根, 起司, cream, butter)
- 煮水+鹽, 滾了下 pasta (optional: 加青菜)
- sauce pan 一點油, 中火煎培根到微金黃
- 放洋蔥,煎到半透明
- 放洋菇,煎一下 (optional: 加雞胸肉)
- 鮮奶油+butter+黑胡椒, 小火煮滾燉一下
- 義麵撈起放進去 (義麵時間-1min)
- 撒點起司進去增加稠度
- 再煮一下就可以撈起來了, 上面撒起司
